My garden produced a ton of beautiful peppers this summer and they are still coming in.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Just last weekend, I picked more than <strong>Peter<\/strong> (who picked a peck)!\u00a0<\/span><\/p>\n<h3><span style=\"font-weight: 400;\">Clearly, It\u2019s been a good year for peppers!<\/span><\/h3>\n<p>Can you believe all this &#8211; right out of my backyard&#8230;<\/p>\n<p><span style=\"font-weight: 400;\"><img loading=\"lazy\" class=\"alignnone wp-image-1152 \" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2017\/10\/image3-e1509016953598.png\" alt=\"\" width=\"495\" height=\"570\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2017\/10\/image3-e1509016953598.png 590w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2017\/10\/image3-e1509016953598-260x300.png 260w\" sizes=\"(max-width: 495px) 100vw, 495px\" \/><\/span><\/p>\n<p><span style=\"font-weight: 400;\">The question is, how can I enjoy these <strong>delicious morsels<\/strong> year- round?<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">By freezing them of course!<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">Luckily, it\u2019s super easy to freeze peppers.<\/span><\/p>\n<ol>\n<li>Clean and fully dry peppers<\/li>\n<li>Prepare baking tray (must fit in freezer) with sheet of parchment paper.<\/li>\n<li>Cut up peppers in a variety of sizes and remove seeds.<\/li>\n<li>Spread cut peppers on baking trays with space between pieces.<\/li>\n<li>Freeze until frozen.<\/li>\n<li>Transfer frozen peppers to freezer bags.<\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">Then use them for everything from scrambles, to fajitas to soup for an extra burst of of essential vitamins and minerals including:<\/span><\/p>\n<ul>\n<li>Vitamin C<\/li>\n<li>Vitamin A<\/li>\n<li>Iron<\/li>\n<li>Copper<\/li>\n<li>Zinc<\/li>\n<li>Potassium<\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">And more!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Not to mention, a cup of chopped pepper is only about <strong>30 calories<\/strong> so they won\u2019t up your calorie count<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Did you know DinnerTime has <strong>hundreds of recipes<\/strong> calling for peppers?
