The first seed catalogue of the year! This catalogue is all about root vegetables, and the pictures are gorgeous!<\/p>\n<p>Cooking with \u201cwinter produce\u201d can be as much fun and creative as using summer produce. I think of \u201cwinter produce\u201d as anything that can be stored\u00a0and used in the winter from last summer\u2019s garden. Primarily, that includes those veggies classified as root vegetables. Even though I can find all sorts of vegetables at the store, I often try to cook \u201cin season.\u201d<\/p>\n<p><img loading=\"lazy\" class=\"wp-image-4544 alignleft\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/IMG_9233-Rosemary-roasted-root-vegetables-agrodolce-750.jpg\" alt=\"\" width=\"384\" height=\"256\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/IMG_9233-Rosemary-roasted-root-vegetables-agrodolce-750.jpg 750w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/IMG_9233-Rosemary-roasted-root-vegetables-agrodolce-750-300x200.jpg 300w\" sizes=\"(max-width: 384px) 100vw, 384px\" \/><\/p>\n<p>Root vegetables are easy to prepare. Almost once a week I roast a mix of root veggies such as carrots, sweet potatoes, red potatoes, garlic and onions. Whatever I have in the larder can be roasted or added to soups. Better yet \u2014 roast and <em>then<\/em> add to soups! Lately, I\u2019ve been inspired to try new recipes such as \u00a0<a href=\"https:\/\/www.dinnertime.com\/recipes\/3803\" target=\"_blank\" rel=\"noopener noreferrer\">Sesame-Ginger Beef Stir-Fry<\/a>\u00a0and <a href=\"https:\/\/www.dinnertime.com\/recipes\/10\" target=\"_blank\" rel=\"noopener noreferrer\">Roasted Carrots with Dill<\/a>.<\/p>\n<p>Sure, root vegetables are tasty and hearty, but are also very healthy for my body and mind.<\/p>\n<h3><\/h3>\n<h3>My seven favorite root vegetables:<\/h3>\n<ol>\n<li><span style=\"color: #008000;\"><strong>Sweet Potato:<\/strong><\/span> Rich in fiber, vitamin C, manganese and vitamin A, sweet potatoes are also a good source of antioxidants, including beta-carotene. Sweet potatoes can help improve blood sugar control, preserve vision, and strengthen immunity and skin health. I love that I can find many different varieties at the store.<img loading=\"lazy\" class=\"alignright wp-image-4511\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Photo-1_Bowl-of-Potatoes.jpg\" alt=\"\" width=\"461\" height=\"299\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Photo-1_Bowl-of-Potatoes.jpg 489w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Photo-1_Bowl-of-Potatoes-300x194.jpg 300w\" sizes=\"(max-width: 461px) 100vw, 461px\" \/><\/li>\n<li><strong><span style=\"color: #008000;\">Potato:<\/span><\/strong> Lately, potatoes have lost in the \u201cWhich is healthier, sweet potatoes or potatoes?\u201d challenge, but don\u2019t discount the nutritional value of the potato. These filling tubers are high in fiber, vitamin C, vitamin B6, potassium and manganese. Beware of the extras like butter and cheese that can add a lot of calories to your potato. Get a double dose of root veggie goodness from this <a href=\"https:\/\/www.dinnertime.com\/recipes\/399\" target=\"_blank\" rel=\"noopener noreferrer\">Grilled Potatoes and Onion<\/a> recipe.<\/li>\n<li><span style=\"color: #008000;\"><strong>Onion:<\/strong><\/span> What\u2019s not to love about onions? Onions are low in calories but high in fiber, vitamin C and antioxidants, protecting our cells against oxidative damage, and preventing disease. <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/21079693\/\" target=\"_blank\" rel=\"noopener noreferrer\">Studies show<\/a> onions can reduce blood-sugar levels in people with diabetes. <a href=\"https:\/\/www.dinnertime.com\/content\/2018\/01\/10\/highlight-onions-stop-sobbing\/\" target=\"_blank\" rel=\"noopener noreferrer\">Read more<\/a> about loving onions.<\/li>\n<li><span style=\"color: #008000;\"><strong>Carrot:<\/strong><\/span>\u00a0Did your mom tell you to eat carrots because they are good for your eyes? She was right! Carrots are high in beta-carotene, which has been <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/17846363\" target=\"_blank\" rel=\"noopener noreferrer\">connected<\/a> to a lower risk of vision issues. Plus, carrots can reduce &#8220;bad&#8221; cholesterol, and increase antioxidant levels.<\/li>\n<li><span style=\"color: #008000;\"><strong>Garlic:<\/strong><\/span>\u00a0I\u2019ve never used garlic to ward off vampires, but I do know it helps to <a href=\"https:\/\/www.healthline.com\/nutrition\/garlic-fights-colds-and-flu\" target=\"_blank\" rel=\"noopener noreferrer\">keep away colds<\/a>. Plus, it can <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16484570\" target=\"_blank\" rel=\"noopener noreferrer\">reduce heart-disease risk, and improve mental health<\/a>. I always have garlic on hand. The nitrate in beets also helps reduce the growth of cancer cells.<\/li>\n<li><span style=\"color: #008000;\"><strong>Ginger:<\/strong><\/span>\u00a0An aromatic root when cooked or steeped, ginger has properties that help reduce inflammation and nausea. Add to tea, soups, stir-fry or smoothies to enjoy its fresh zing of flavor! Add to all varieties of dishes such as soups, salads; enjoy roasted or saut\u00e9ed.<\/p>\n<p><span style=\"color: #993366;\">Jicama:<\/span> A crisp and refreshing vegetable that is rich in fiber and vitamin C. Great raw in salads, but can also be cooked.<\/p>\n<p><span style=\"color: #993366;\">Kohlrabi:<\/span> Use the greens and the bulb in salads, soups and saut\u00e9s.\u00a0<img loading=\"lazy\" class=\"alignright wp-image-4510\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Screen-Shot-2019-01-15-at-2.41.55-PM.png\" alt=\"\" width=\"496\" height=\"424\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Screen-Shot-2019-01-15-at-2.41.55-PM.png 711w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2019\/01\/Screen-Shot-2019-01-15-at-2.41.55-PM-300x257.png 300w\" sizes=\"(max-width: 496px) 100vw, 496px\" \/><\/p>\n<p><span style=\"color: #993366;\">Radish:<\/span> A crunchy, spicy root vegetable that, like the jicama, is often eaten raw, preserving the vitamin content.<\/p>\n<p><span style=\"color: #993366;\">Parsnip:<\/span> Resembling a white carrot, it is a less-sweet root, and delicious when added to a tray of roasted veggies or in soups and stews.<\/p>\n<p><span style=\"color: #993366;\">Turnip:<\/span> The greens are great to eat as well.<\/p>\n<p><span style=\"color: #993366;\">Rutabaga:<\/span> A sweeter, denser version of a turnip. It provides fiber, potassium, vitamin A and vitamin C.<\/p>\n<p><span style=\"color: #993366;\">Turmeric: <\/span>When ground, this spice has been shown to improve joint pain, reduce blood-sugar levels, and aid symptoms of depression. It can be used in both sweet and savory dishes.
