I get it! I love soup too, and it has so many wonderful ways of making us feel good. Kinda like a warm hug!<\/p>\n<p>When I was little, my mom would make tomato soup and grilled cheese sandwiches on cold rainy nights. And of course, we had chicken noodle soup\u00a0<a href=\"http:\/\/blog.doctoroz.com\/you-wanted-to-know\/you-wanted-to-know-chicken-soup\" target=\"_blank\" rel=\"noopener noreferrer\">when we were sick<\/a>. Most of these soups were from a can, but I have found I really love making soup from scratch.<\/p>\n<p>I used to be intimidated by the thought of making soup from scratch. Then I did it.\u00a0It\u2019s pretty easy and I like controlling\u00a0<a href=\"https:\/\/sodiumbreakup.heart.org\/boost-the-flavor-and-lower-the-salt-in-homemade-soup\" target=\"_blank\" rel=\"noopener noreferrer\">how much salt<\/a>\u00a0is added as well as how chunky I chop my veggies. A large heavy pot will help reduce the chance of burning. It will also keep the heat distributed for even cooking.<img loading=\"lazy\" class=\"alignright wp-image-1604 \" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.46.43-PM-300x172.png\" alt=\"\" width=\"453\" height=\"260\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.46.43-PM-300x172.png 300w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.46.43-PM-1024x587.png 1024w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.46.43-PM-768x440.png 768w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.46.43-PM.png 1085w\" sizes=\"(max-width: 453px) 100vw, 453px\" \/><\/li>\n<li>Use the<span style=\"color: #008000;\"><strong>\u00a0freshest ingredients<\/strong><\/span>\u00a0possible. I like my veggies chunky so I don\u2019t mind taking the time to cut up my carrots, celery etc., but sometimes I just need to throw in a bag of frozen or already cut veggies. The same for beans, if you don\u2019t have time to soak the beans overnight, go ahead and use canned beans that you\u2019ve rinsed. Ditto with your proteins such as chicken. If you have the time, poach your chicken (boiled in water until cooked through) but already cooked is great too. It\u2019s all good!<\/li>\n<li><span style=\"color: #008000;\"><strong>Stock<\/strong><\/span>\u00a0is your base. If I happen to have a leftover rotisserie chicken,\u00a0<em>maybe\u00a0<\/em>I will throw it in a pot of water, add some herbs, celery, onions and carrots and let simmer to make a homemade stock, but\u00a0<em>really<\/em>? Today you can buy great quality stocks and broths, which is very convenient! While\u00a0<a href=\"https:\/\/www.mccormick.com\/kitchen-basics\/stock-vs-broth\">stocks and broths<\/a>\u00a0can generally be used interchangeably, stock has more protein and a richer mouth-feel from simmering bones, and often has significantly less sodium.<\/li>\n<li><span style=\"color: #008000;\"><strong>Herbs and spices<\/strong><\/span>\u00a0are your friends. Fresh or dried, these will really boost the flavor and set your soup apart. Adding a bit more than a recipe calls for is ok unless it is a particularly strong flavor such as curry or red pepper flakes. The flavor will deepen as the soup simmers, so do a taste-test part way through cooking to see if you want to add a pinch more. You\u2019ll feel like a real chef!<img loading=\"lazy\" class=\" wp-image-1603 alignright\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.35.10-PM-300x207.png\" alt=\"\" width=\"351\" height=\"242\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.35.10-PM-300x207.png 300w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/01\/Screen-Shot-2018-01-19-at-5.35.10-PM.png 645w\" sizes=\"(max-width: 351px) 100vw, 351px\" \/><\/li>\n<li>Some soups need to be\u00a0<span style=\"color: #008000;\"><strong>blended<\/strong><\/span>\u00a0until smooth. Everyone has their preferred method to achieve this. I love the convenience of using my immersion blender but a regular blender or a food processor works\u00a0well too. Parent tip: kids love to help with the blending!<\/li>\n<li>Don\u2019t throw your soup out if you realize you have<span style=\"color: #008000;\"><strong>\u00a0burned the bottom<\/strong><\/span>. Carefully transfer the soup with a ladle to another pot and continue to cook.<em>\u00a0Do Not<\/em>\u00a0scrape at the bottom before transferring or the burnt taste will be forever in your soup. We\u2019ve all been there. Simmer on low and stir occasionally.<\/li>\n<li>Creamy soups are thick and satisfying, so if you want to give your soup a\u00a0<span style=\"color: #008000;\"><strong>thicker consistency<\/strong><\/span>\u00a0without using cream, take out half the veggies and puree them. Add them back to the soup and enjoy. While nothing takes the place of cream, sometimes I can hardly tell the difference! One of my favorite examples is\u00a0<a href=\"https:\/\/www.dinnertime.com\/recipes\/3219\">Roasted Brussels Sprouts and Cauliflower Soup<\/a>, which is so rich and satisfying.<\/li>\n<li><span style=\"color: #008000;\"><strong>Over-salting<\/strong><\/span>\u00a0can be easily fixed. Just add a cut potato to the pot and after about a half hour pull the potato pieces out and discard. The potato will have absorbed the salt. If you really want to impress, sprinkle a topping that enhances the soup. For example, chopped green onions, parsley, shredded cheese, bacon bits or croutons will give your soup a restaurant-quality flair.<\/li>\n<\/ol>\n<p>Soup is one of my favorite foods any time of day. It&#8217;s nutritious and generally low in calories.\u00a0<em>Big Bonus<\/em>:\u00a0<a href=\"http:\/\/news.psu.edu\/story\/196394\/2007\/04\/25\/eating-soup-will-help-cut-calories-meal\" target=\"_blank\" rel=\"noopener noreferrer\">Studies<\/a>\u00a0have shown that people who begin a meal with a bowl of low calorie soup consume 20% fewer calories overall for the meal. Plus, it&#8217;s easy to make extra servings for the next day, to share with a friend or freeze for the future.
