Remember to wash your hands frequently while cooking, especially after touching raw meat.<\/p>\n<p>Speaking of raw meat, be sure to\u00a0<strong>keep your raw meat separate<\/strong>\u00a0from your vegetables and cooked meat. Never reuse a plate that held raw meat unless you first wash it with hot soapy water. If you\u2019re taking a cooler to your grilling spot, be sure to store the raw meat at the bottom of the cooler so its juices cannot leak onto vegetables or other foods.<\/p>\n<p><strong>Marinate foods in the refrigerator<\/strong>, and always discard the marinade before cooking. If you want to baste your meat while grilling, separate a portion of the marinade (before adding the raw meat) to use later.<\/p>\n<p>Use a\u00a0<strong>meat thermometer<\/strong>\u00a0to ensure that your meat is at the appropriate temperature. Insert the tip into the thickest section\u00a0through the side of your cut. Try to insert about 2 inches of the tip into the meat without hitting bone or protruding through the other side (the thermometer senses the temperature range from the tip and upward two inches, and then averages the temperature for the reading). Then\u00a0<strong>wipe down the grates<\/strong>\u00a0with paper towels coated with vegetable oil. This second step is essential to finish cleaning the grill, and to remove any broken-off brush bristles.<\/p>\n<p>For a gas grill:\u00a0<strong>Preheat<\/strong>\u00a0your gas grill for about 15 minutes at 350 \u00b0F.<\/p>\n<p>For a charcoal grill:\u00a0<strong>Use a chimney starter<\/strong>.<img loading=\"lazy\" class=\"alignright wp-image-2761 \" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/chimney_charcoal_grill-300x200.jpeg\" alt=\"\" width=\"337\" height=\"224\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/chimney_charcoal_grill-300x200.jpeg 300w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/chimney_charcoal_grill-1024x684.jpeg 1024w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/chimney_charcoal_grill-768x513.jpeg 768w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/chimney_charcoal_grill.jpeg 1080w\" sizes=\"(max-width: 337px) 100vw, 337px\" \/>\u00a0Set the chimney starter on the bottom of the grill (remove the grate) and place a layer of crumpled paper in the bottom, then fill with your charcoal. Light the paper, and it will catch the charcoal on fire.\u00a0Coals in a chimney will be ready in 15 to 20 minutes. When you see the layer of grey ash on the smoldering coals, dump them into the grill.<\/p>\n<p><strong>Oil your grate.<\/strong>\u00a0Dip a paper towel in vegetable oil and rub it on the warm, clean grate. If you\u2019re looking to reduce your fat intake, cut a potato in half, and rub the white part along the hot grates to prevent food from sticking.<\/p>\n<h1>\u00a0Now, on to the fun part \u2013 the grilling!<\/h1>\n<h2>Steak:<\/h2>\n<p style=\"text-align: left;\">Three factors (tenderness, juiciness, and flavor) comprise the quality grade.<img loading=\"lazy\" class=\"alignnone size-full wp-image-2779\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/06\/USDA.png\" alt=\"\" width=\"552\" height=\"530\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/06\/USDA.png 552w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/06\/USDA-300x288.png 300w\" sizes=\"(max-width: 552px) 100vw, 552px\" \/><\/p>\n<p><a href=\"https:\/\/meat.tamu.edu\/beefgrading\/\" target=\"_blank\" rel=\"noopener noreferrer\">Click here<\/a>\u00a0if you want a deep dive into the criteria for grading of meats.<\/p>\n<p>Another important factor to consider when grilling steak is the cut. T-bone, tenderloin, and top sirloin are all winners. Then remove the steak from the refrigerator about 30 minutes before you plan to cook it. Letting\u00a0steak warm to room temperature is most important for thicker cuts like a bone-in rib eye or porterhouse. Placing cold steak on a hot grill is a good recipe for dried-out meat. If marinating breasts, slice shallow cuts into the\u00a0chicken to allow more surface area. Plan to marinate for at least a half hour for the chicken to absorb the tastes of your marinade or rub.<\/p>\n<p>If using\u00a0<strong>barbecue sauce<\/strong>, wait until the temperature of the breasts has reached about 160 \u00baF (about 9 minutes over high heat) before liberally applying the sauce. If you\u00a0add the sauce too early, the sauce will burn.<\/p>\n<h2>Fish:<\/h2>\n<p><img loading=\"lazy\" class=\"alignright wp-image-2712\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/salmon_grill.jpg\" alt=\"\" width=\"465\" height=\"310\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/salmon_grill.jpg 600w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2018\/05\/salmon_grill-300x200.jpg 300w\" sizes=\"(max-width: 465px) 100vw, 465px\" \/><\/p>\n<p>Your goal with grilled fish is to create a seared exterior with a moist, flaky filet. Sturdy fish like tuna, salmon, and halibut can be cooked directly on the grate. More-delicate fish such as tilapia and flounder will break apart but is easy to grill in a foil packet.<\/p>\n<p>To keep the fish from sticking,\u00a0<strong>oil the grate<\/strong>\u00a0really well until it\u2019s glossy. Preheat the grill to a very high temperature \u2014 400 to 450 \u00b0F.<\/p>\n<p><strong>Pat the fish dry\u00a0<\/strong>with paper towels or a clean kitchen towel.<\/p>\n<p><strong>Season<\/strong>\u00a0the fish, and allow it to rest at room temperature for about 10 minutes before placing it on the hot oiled grate,\u00a0<strong>skin-side down<\/strong>, then reduce the grill temperature to medium-high.<\/p>\n<p>Don\u2019t move the fish until the skin side has a nice seared look. Flip halfway through cooking. To keep the fish intact, use two fine-edged spatulas to lift both sides of the fish at the same time.\u00a0<strong>Allow about 8 minutes of total grilling time per inch of thickness<\/strong>.
