I\u2019ve had years when I give away tomatoes and soooo many peppers. This year, it\u2019s the year of the cucumber. I mean, every week we are picking at least eight to ten cucumbers, fully grown, all from one plant!<\/p>\n<p>I\u2019ve never had such gorgeous and tasty cucumbers from my garden. We\u2019re eating them all the time and I\u2019m loving it. It\u2019s hot outside and the crunch of a cool cucumber is just the right thing to naturally quench my body\u2019s thirst.<img loading=\"lazy\" class=\"wp-image-7569 alignleft\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/08\/IMG_1506-2.jpg\" alt=\"\" width=\"464\" height=\"192\" \/><\/p>\n<p>Cucumber is one of nature\u2019s <a href=\"https:\/\/www.dinnertime.com\/content\/2020\/07\/22\/eat-your-water\/\" target=\"_blank\" rel=\"noopener noreferrer\">home-grown hydration resources<\/a>. Like watermelon, the cucumber has a high water content (95%). Plus, cucumbers contain potassium, magnesium, vitamin C, folate, beta carotene, and vitamin K.<\/p>\n<p>Apparently, I\u2019ve done a good job watering since cucumber plants\u00a0 grow well in a warm and moist environment. In fact, a well watered cucumber plant will produce sweeter fruit. (Yes, <a href=\"https:\/\/www.eufic.org\/en\/healthy-living\/article\/is-a-cucumber-a-fruit-or-a-vegetable-and-why\" target=\"_blank\" rel=\"noopener noreferrer\">cucumber is a fruit!<\/a>)<\/p>\n<p>I\u2019ve been growing a classic garden cucumber, but I also love English cucumbers. Next year I want to try other varieties such as the lemon cucumber.<img loading=\"lazy\" class=\"aligncenter size-full wp-image-7571\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/08\/cucumber-varieties-types-1.jpg\" alt=\"\" width=\"700\" height=\"474\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/08\/cucumber-varieties-types-1.jpg 700w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/08\/cucumber-varieties-types-1-300x203.jpg 300w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>We love to eat cucumbers any way we can&#8230; salads, dips, soups, with a dollop of hummus on top and more. But with our abundance of cucumbers this year, we&#8217;ve been looking for other things to do with them.
