Not what you <em>should<\/em> be eating but what do you <em>really<\/em> eat every day&#8230;your go to? Some might say an apple, eggs, cheese, chocolate? Weirdly enough my answer would be a bell pepper!<\/p>\n<p>What\u2019s not to love about peppers?! Ok, let\u2019s be totally honest. My go-to for sure would be a cup of coffee with cream. But my <em>work-it-in<\/em> favorite food is a pepper. I like the sweeter varieties like the red, yellow or orange.<img loading=\"lazy\" class=\"wp-image-8030 alignleft\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/maxresdefault.jpg\" alt=\"\" width=\"360\" height=\"307\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/maxresdefault.jpg 800w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/maxresdefault-300x256.jpg 300w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/maxresdefault-768x655.jpg 768w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><\/p>\n<p>For the last six months or so I\u2019ve made sure I have a pepper every day in some form or another. I love diced peppers in my scrambled eggs, slices in my sandwich wraps and chopped in chunks and added to my roasted veggies. If they aren\u2019t part of the recipe for that night\u2019s main dish, I\u2019ll add them to a salad. But my favorite is to make a snack-plate of sliced peppers. I like to sprinkle just a little salt over them. The crisp snap combined with the slight saltiness solves my need for salty chip-type snacks.<\/p>\n<p>It\u2019s good news that peppers are just 31 calories each and made up of 92% water, but what is really cool is that a red or green bell pepper contains more than three times the amount of vitamin C than an orange! Who knew? Red peppers are also a great source of vitamin B6 and folate. That sensation of heat when eating peppers is due to the chemical capsaicin\u2014the more capsaicin, the hotter the pepper. The heat level (spiciness) of food is measured according to the Scoville Heat Unit scale. Check out the scale for your favorite varieties. Watch out for the Carolina Reaper variety. Orange is the most common color, but they can be red, white or brown. The spice level can vary greatly from pepper to pepper, so you may want to test a bite first. This is not true. Granted, red peppers take longer to ripen and may start out green, but green, purple, yellow, orange and red are all different bell pepper varieties, each with their own distinctive taste. Check out the bottom of the bell pepper and count the lobes. Always wear gloves, avoid touching your face and eyes, and wash your hands thoroughly after handling.<\/li>\n<li>If your hands sting after handling peppers, wash them in whole milk or yogurt.<\/li>\n<li>Contrary to popular belief, the seeds of a pepper don\u2019t actually hold the heat; it\u2019s the white membrane that holds the seeds in place that contains all the capsaicin. If you want to scale back the heat, remove that membrane.<\/li>\n<\/ul>\n<h2>How to Soothe the Hot Pepper Burn<\/h2>\n<h3>While Cooking:<\/h3>\n<p>It\u2019s easy to overdo it, so it\u2019s best to start with a little and add to taste as you go.\u00a0 If you find your dish too hot, here are a few tricks to tone down the heat.<img loading=\"lazy\" class=\" wp-image-8002 alignright\" src=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/pepper-on-fire-166275185-80b16650ed4a474cad95bd02818c675a.jpg\" alt=\"\" width=\"416\" height=\"277\" srcset=\"https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/pepper-on-fire-166275185-80b16650ed4a474cad95bd02818c675a.jpg 768w, https:\/\/wp2.dinnertime.com\/content\/wp-content\/uploads\/2020\/10\/pepper-on-fire-166275185-80b16650ed4a474cad95bd02818c675a-300x200.jpg 300w\" sizes=\"(max-width: 416px) 100vw, 416px\" \/><\/p>\n<ul>\n<li>Add water or more vegetables to increase the volume of the dish; diluting the capsaicin molecules.<\/li>\n<li>Add dairy, like cream or yogurt.<\/li>\n<li>Add something sweet, like honey or sugar, to balance the spiciness.<\/li>\n<li>Cut the acid. Adding something acidic, like vinegar or lemon juice, will just amp up the heat. In case of a real emergency, try stirring in a little bit of baking soda.<\/li>\n<\/ul>\n<h3>After Eating:<\/h3>\n<p>If your mouth feels fiery, go for a glass of milk\u2014not water. The fats in milk work to dissolve spicy capsaicin, while water simply spreads it around.
